Hey everyone! I hope today has been going well for all of you! I just got back from grabbing a tea from Coffee Bean and grocery shopping a bit ago, and I’ve been making my lunch since! I’d DEFINITELY age lying if I said I wasn’t scared to have this! It’s the guacamole that’s scaring me! 😅 I am NOT a fan of avocados, you guys. I never have been. Not in any form, really! They are just too good for you and have such great healthy fats that I really don’t want to pass them up! So, I made a little variation of them with a HELLA flavorful lunch and am hoping I can eat it! I am having: a loaded micro-bowl made with shrimp (in @traderjoes chili lime seasoning), lime + cilantro basmati and black beans, sautéed zucchini (in coconut oil spray, cayenne, lime juice, and pepper), a bed of romaine, guacamole (1/2 a medium avocado with garlic, pepper, lime juice, and cilantro), and habanero salsa for the top (Trader Joe’s, too)! 😛💦💃🏻 This DOES look and smell super delicious, but I am scared I won’t like the guacamole! We will see, I guess! 😂 My family and I are off to a BBQ here in a bit, but after I eat, I’m going to stretch out and get ready to go! I hope you guys have ana amazing afternoon! About last night 😛so I didn’t actually finish this piece of salmon cause it was a hugeeee piece but, in general, one thing I’m liking so far on this whole30 is that I’m actually eating more at my meals. I normally would feel a little self conscious to have so much on my plate so I probably would eat less only to need a snack (i.e. dessert) after dinner. But now I’m just eating a little more of the quality food and feeling more satisfied! So even though this was too much food this time I like making the effort to fill up on the good stuff 🙌🏼 • • Wild sockeye salmon, kale, brussles and sweet potatoes 😛

Do you love fish as much as we do? Try this one-pan garlic roasted salmon & broccoli! What you need: For the Broccoli: 2 heads broccoli, cut into florets 2 tablespoons olive oil 1 tablespoon garlic, minced sea salt and black pepper, to taste For the Salmon: 5 (6 oz) salmon fillets, skin-on 1 tablespoon olive oil 2 teaspoons garlic, minced 1 teaspoon Lemon Zest 2 teaspoons dried marjoram ½ teaspoon sea salt ground black pepper, to taste 1 lemon, cut into 5 slices Instructions: 1. Preheat the oven to 450 degrees F. Lightly grease a rimmed baking sheet with olive oil. 2. In a large bowl toss the broccoli ingredients together, seasoning generously with sea salt and black pepper. Mix until well combined. 3. Spread the seasoned broccoli in a single layer over the prepared baking sheet and roast in the preheated oven for 10 minutes. 4. Meanwhile, drizzle the olive oil over the salmon fillets and evenly sprinkle with the minced garlic, lemon zest and dried marjoram. Season generously with sea salt and black pepper. 5. Remove the baking sheet from the oven and move the broccoli to create open spaces for the fillets. Place the salmon in the empty spaces and put back in the oven for 10 to 12 minutes, until the salmon is flaky and cooked through. Top each fillet with a slice of lemon and place under the high broil for 1 minute. Remove from the oven. Enjoy! . . . .
